Honey Glazed Carrots

4c sliced carrots (1 lb)
1/4 c mixed olive oil and balsamic vinegar, to taste
2 tbsp honey
2 tbsp chopped pecans

Bring carrots, olive oil/balsamic vinegar mixture, and honey to boil in saucepan. Reduce heat to medium-low, cover, and simmer 15 minutes or until tender. Sprinkle with pecans and serve.

**Adding 1/4c chopped dried apricots is also very very tasty with cooked carrots**
