Vegetarian Pumpkin soup
5 spoons of butter / oil / margarine
1 whole onion, diced finely
6 spoons of flour
5 cups of vegetable stock
1 generous piece of pumpkin, diced (about the size a shoe)
1 whole tomato diced finely
Fry onion till clear
Take off heat and add flour
Stir
Add stock one cup at a time stirring constantly to thicken
Add pumpkin and water if desired
Simmer at a low heat stirring occasionally till pumpkin softens
Add tomato and cook for five minutes
Blend
