Default Vegetarian Sandwiches

Savory Egg Spread

1/2 cup chopped ripe olives
3/4 cup tomato sauce
2 tablespoons finely chopped onions
1 egg, beaten
1 tablespoon margarine
1/4 teaspoon salt

Simmer olives and onions in margarine.
Add tomato sauce and cook, stirring constantly for 5 minutes.
Add egg and cook till thickened.

Yield: 1 cup.

Frankfurter Rolls

6 vegetarian frankfurters 6 thin slices of bread

Broil frankfurters.
Remove crusts from bread.
Roll each frankfurter in a slice of bread. Secure with toothpick.
Bake in oven until bread is brown.

Creamed Egg Sandwiches

Butter
Olives or dill pickles, chopped
5 or 6 eggs, beaten
Salt
1/4 cup mayonnaise

Heat butter on frying pan and add eggs, mayonnaise, olives or pickles, and salt.
Cook slowly. stirring constantly until the eggs are of the desired consistency.
A little chopped parsley may be added if desired. Place between thin slices of buttered bread. May be served either hot or cold.

Yield: 6 to 8 portions.

Grilled Veggies Burrito

Serves 3-5

2 tablespoons oil
1 dash of chili pepper powder
1 onion1 zucchini
1 bell pepper, red or green
1 tomato
1 avocado
1 limetortilla sheets, flour or corn
salt & pepper
cilantro

Wash and slice all vegetables. In frying pan, sauté onion, zucchini, and bell pepper in oil for 2 minutes or until tender. Add salt & pepper, chili powder. In a large plate, place a sheet of tortilla. Place cooked veggies, 2 slices of tomato and avocado, a squeeze of lime juice on top of tortilla. Wrap it up, and garnish with a sprig of cilantro. A low calorie recipe.

Veggies and Tofu Wrap

Serves 5

3 tablespoon oil
2 tablespoon soy sauce
5 large sheets of chard or cabbage leaves
1 package firm tofu
1 cup shredded lettuce
1 cup sprouts, alfalfa or clover
˝ cup carrots, shredded
1 tomato, sliced
˝ red onion, diced salt & pepper

Slice tofu into strips and sauté with oil in frying pan for 1 minute on each side. Add soy sauce. Wash and prepare all veggies. In a large plate, place a sheet of chard leaf. Top with 2 slices of tofu and rest of veggies. Salt and pepper to taste. An awesome vegetarian wrap recipe!

I love fried tofu! Especially when they're dipped in vinegar and soy sauce.
