    Vegetables-from artichokes to zucchini-are relatively low-calorie super foods that can significantly lower your risk for cancer, heart disease and other diseases. But how you cook your veggies can help boost their antioxidant powers or turn them into an ineffective and tasteless mush.

    Led by Dr. A. M. Jimenez-Monreal, Spanish researchers from the University of Murcia and the University of Complutense have determined that microwaving and griddling vegetables are generally the best way to cook them, while boiling and pressure-cooking tend to be the worst, reports Science Daily. (Griddling is cooking on a flat metal surface with no oil.) "In short, water is not the cook's best friend when it comes to preparing vegetables," advised Jimenez-Monreal.

    I like to usually grill, roast or steam my veggies. I almost never boil them. I don't like mushy vegetables and it seems when I boil it's always mush city.

    Default Farmers Market

    I got some Sweet Peppers today at Farmers Market Red & Yellow. I will make some stuffed peppers, I steam my veggies just right never mushy, I have a steamer that I use and test it with a fork, it works for me. I also do lots of stir frying in the summer time. I like to cook things lighter in Hot weather.

    I made stuffed peppers tonight for Tuesday's nights dinner.

    1 lb. ground beef
    1 can of Ro*tell tomatoes & chillies,
    1 can of kidney beans with sauce,
    1 cup of white rice (made separately)
    1/2 pkg. of chili seasoning
    1 cup of taco cheese

    I made the mixture above & stuffed 2 Red sweet peppers and 1 yellow sweet pepper. I had some mixture left over & we sampled it, mm Good!! Here is a picture of the peppers. Cookie

    Hi,


    Vegetables are essential to the human diet. We get a great deal of our daily vitamin content from vegetables. We need to make sure that how we cook them does not drain vitamin contents and benefits of consumption.I like to usually grill, roast or steam my veggies. I almost never boil them.Thanks for the info.
