Even though it's not Saint Patrick's Day, we had corned beef and cabbage tonight. The heads of cabbage at the grocer were small, so I bought two. But that was too much for the meal. I should have kept 1/2 a head for cole slaw. I think it was a good dinner even with the overage of cooked cabbage.
My favorite corned beef is a corned eye of round roast, which it seems from my experience, is only available around March 17th. I wish it was available year round as I try to avoid fat in meals, and eye of round is a very lean cut of beef. |

We had Sloppy Joe Skillet last night (another recipe from www.kraftfoods.com) and tonight I think I'll make some regular ol' pork chops with buttered noodles. I'm feeling kinda lazy today, plus our toddler kept me up half the night, so I'm dead tired anyway.
