I had spaghetti last night. Usuallt my husband makes the sauce himself, but we had sauce from a jar last night. It wasn't quite as good...but it still worked.

We had company and I was very pleased that all my food turned out very well. We had:

Parmesan-Sage Crusted Pork Chops
Sweet Pea Risotto
Italian Salad
Almond Green Beans

Coffee
Gingersnaps
Chocolate Hazelnut Kisses

Sounds like you had a busy night last night, Mrs. Chipotle.

I had an easy night last night. Hubby was at the Nascar race in Texas, so I made me and girls some cheeseburgers. Quick & easy, even if they aren't so healthy.

Even though it's not Saint Patrick's Day, we had corned beef and cabbage tonight. The heads of cabbage at the grocer were small, so I bought two. But that was too much for the meal. I should have kept 1/2 a head for cole slaw. I think it was a good dinner even with the overage of cooked cabbage.

My favorite corned beef is a corned eye of round roast, which it seems from my experience, is only available around March 17th. I wish it was available year round as I try to avoid fat in meals, and eye of round is a very lean cut of beef.

I think you were craving Mexican food.

We had Zesty Chicken & Rice Skillet. I got the recipe from kraftfoods.com; everyone liked it.

I too like those eye of round corned beefs. But they musn't sell or they would be more available then just in March.

Tonight I tried to cook a pot roast with potatoes and carrots and onions. But after 3 hours, it's still tough, and I don't understand that. But since we're hungry around here, we've decided to 'slow cook' the pot roast and have it tomorrow night.

So instead we're having popcorn. Not! We're making a quick chicken stir-fry with frozen chicken and oriental veggies.

We had Sloppy Joe Skillet last night (another recipe from www.kraftfoods.com) and tonight I think I'll make some regular ol' pork chops with buttered noodles. I'm feeling kinda lazy today, plus our toddler kept me up half the night, so I'm dead tired anyway.
