I made a chicken stir fry last night to use up some leftover chicken. It was a great way to get in some veggies which I don't normally like. I used snow peas, celery, green pepper, mushrooms, carrots, and water chestnuts.

We had such a bad dinner, but it was so good. Junk food for adults.

Tater tot casserole:

Brown 1 pound ground beef with 1/2 chopped onion. Drain and stir in 2 cans cream of mushroom soup. Spread in a 9x13 dish. Sprinkle some cheese over. Top with frozen tater tots, lined up in rows. Bake for 30 minutes.

I made homemade pizza - thick crust with a meat sauce, mozzarella, provolone, and sandwich pepperoni - tummy buster!

last night we had chicken and fried rice.

tonight...I'm thinkin' maybe biscuits and gravy. We're runnin' on the low side of groceries, so pickin's are slim!

I kinda experimented tonight with what I had around the house (like I said, groceries are slim).

I rubbed some taco seasoning into some chicken breast and grilled them up in the Foreman grill (I generally hate the thing, but figured I'd use it for a change). I served those on top of some mexican rice (white rice mixed with salsa) and topped with a little grated cheese.

Then I triangled up some flour tortillas and sprinkled them with salt and cayenne pepper and baked until crispy. Served with a dollop of sour cream to cut the hot of the cayenne.

Hubby LOVED it. I think that just made it's way into our regular meal rotation!

tonight was baked ziti and french bread.

DH grilled pork chops, marinated in garlic/black pepper marinade. Yum.

Medako, I should try those baked tortilla chips.

We had hamburgers that were stuffed with pepper jack cheese and a green salsa, Potato Salad, baked beans and corn on the cob.

Last night was taco night, with fruit on the side. All the food groups in one fatal swoop. Dairy for the cheese, meat, lettuce and tomatos for the veggie and strawberries for the fruit on the side. Oh yeah, and the shell is the bread group. I use light cheese..
