I love breakfast for dinner! I ate leftovers, and a toasted pita spread with cucumber dill hummus.

We had thin boneless pork chops simmered in ketchup, hot sauce, sugar, and water; with creamed corn & buttered noodles. My hubby didn't like how thin the chops were, I swear when I bought them they looked about twice as thick, but the packaging wasn't exactly look-friendly. Overall though, both my hubby & kids loved them. I made 6, 4 regular size & 2 small ones because of the 15 month old, and all I got was the second small one. My hubby says I'm going to kill him with my cooking because it's sooo good. I always tell him I can't make him happy at dinner time because either I make too much & he overeats, or I don't make enough & he can't overeat. Typical...

Now that's what you always want to hear!

I watched an episode of Food 911 one time where they did pork chops. They were saying that the secret to good juicy ones is to make sure they are very thick. I've been on guard for that ever since.

I like having french toast for dinner, most people think of it as a breakfast food but I think it can go for any meal.

I was feeling lazy tonight, and had some leftover hamburger meat... so I made hamburger quesadillas. I just layered refried beans, cheese (I used sliced American cheese because that's what I have on hand), and crumbled, fried hamburger on a tortilla, topped it with another tortilla. Then I put it in a frying pan to crisp the outside and melt the cheese.

I made chili tonight using chili-o seasoning, Laura's lean ground beef, and kidney beans. Served the chili over spaghetti noodles with some fresh onion, and a little cheddar cheese. I should have made some corn bread to go with the chili but didn't.

I made king ranch casserole tonight. Didn't really feel like it, but I needed to use up the chicken and was feeling lazy.

Tomorrow, steaks on the grill.

Steaks on the grill sounds good... unfortunately we're under a burn ban and can't grill outdoors.
