I watched an episode of Food 911 one time where they did pork chops. They were saying that the secret to good juicy ones is to make sure they are very thick. I've been on guard for that ever since. |

I was feeling lazy tonight, and had some leftover hamburger meat... so I made hamburger quesadillas. I just layered refried beans, cheese (I used sliced American cheese because that's what I have on hand), and crumbled, fried hamburger on a tortilla, topped it with another tortilla. Then I put it in a frying pan to crisp the outside and melt the cheese.

I made chili tonight using chili-o seasoning, Laura's lean ground beef, and kidney beans. Served the chili over spaghetti noodles with some fresh onion, and a little cheddar cheese. I should have made some corn bread to go with the chili but didn't.
