That sounds like a Vegetarian Southwest Omelette. I know some vegetarians don't eat eggs, but some do, and that's the group that would probably like that omelette. I'd try it myself, but I can't eat spicy foods right now. The baby doesn't like it when I eat them, I get terrible heartburn. I can't wait till Christmas, when this little guy is due and I can eat a big heaping plate of nachos with jalapeno cheddar cheese.

The way I make a Western Omelet is with about 1 tbsp chopped tomatoes, 1 tbsp chopped green bell pepper, 1 tbsp chopped ham, and optionally, some cheddar cheese. Occasionally, I'll mix a few dashes of Tabasco Sauce in with the eggs.

I have seen some NY deli's that serve omelets with ham, and bleu cheese. They're different but are pretty good.

Thanks. I've been having some major cravings this time around too... I went a whole week eating nothing but hot ham and cheese sandwiches for breakfast and lunch. This week's kick is Pop-Tarts. Two weeks ago, it was cheese and refried bean quesadillas. I never know what to buy me when we go grocery shopping thanks to the cravings.

Phoneyxstarr, when I was pregnant, I had wicked cravings my first trimester for baked potatoes. Later on had a Krispy Kreme craving that was SO bad that one time my husband joked about eating the last Krispy Kreme and I cried for 10 minutes straight.

MMM spinach sounds good! I like tomatoes in mine as well, if they are cooked first.
