Default Tonight it is Chicken Mole Enchiladas

My husband and children love Mole so I thought I would add in some chicken and make a meal out of it. I also serve refried beans and make some spanish rice.

There are nights where I don't even add chicken I just dip the tortillas into the sauce and make the enchiladas with just cheese. They are good that way as well.

My husband and I recently discovered mole and have fallen in love with it. I haven't ever attempted to make a dish with it at home - so, I think I've been inspired! The enchiladas sound great (I haven't had the mole on anything but a chicken burrito before).

The way it was explained to me is it's kind of a combination of roasted red peppers and chocolate flavors. It's a really rich sauce that's got jus tthe right amount of spice.

Medako,

Is correct it is a combination of peppers and choclate with a little bit of heat. It is usually served over chicken or over enchiladeas. I don't make my own. I usually go to the Market and get a jar of the mixture from the Latino section. If you get the jar all you do is add alittle water until it is in a sauce consistancy.

We had mole burritos over the weekend....I just can't believe we didn't discover this flavor sooner!

I have never had mole burritos that sounds really good. Do you mind telling us what was in them? I might have to make some this weekend.

We get chicken mole from Qdoba. They take a giant tortilla, warm it, then fill it with rice, black beans, chicken, mole sauce, pico, salsa, sour cream and cheese, then roll it up. yummy!

I am going to have to try that this weekend. I love black beans and rice with chicken. You could probably add guacamole as well.
