Panini - 15 - 20 minutes
Penne pasta in oil with sundried tomatoes and marinated artichokes - 25 minutes - including making a green salad Macaroni in oil with garlic - 25 minutes including making a green salad Antipasto - assorted greens, tomatoes, radishes, cukes, cheeses, ham, salami, olives, egg, celery, carrots, etc. - 25 minutes (due to all the slicing and chopping) Club sandwiches and BLT's - 15 to 25 minutes Basic casseroles - 30 to 45 minutes Italian sausage, peppers and onions - 30 - 45 minutes and boil corn on the cob at the same time Sausage and kraut - 40 minutes Oven baked fish and baked potato slices - 20 minutes Macaroni and potato salad can be assembled in 30 - 45 minutes or less And what's wrong with Brussel sprouts????? I love them (but my body doesn't! LOL) that's why I call them "killer cabbage balls from outer space" |

Beef stroganoff.
Brown a pound of ground beef (or turkey) with some chopped onion. Add some thyme, oregano and marjoram, a can of cream of mushroom soup and half a can of water. Bring to a simmer. Just before serving, add a tablespoon or two of sour cream. Serve over rice or egg noodles. I also often keep taco meat around. Just brown some ground beef or turkey and follow the directions on the taco seasoning packet. That should be enough for 2-3 meals. With it you can make: Quesadillas Taco salad Nachos |

My fastest things are quesadillas (just top tortillas with cheese, beans, chicken, beef, whatever and cook in pan until melted and good) and apricot chicken. For the chicken I just mix a jar of apricot jam with a couple of T of mustard and a couple T of water, and some rosemary. Then I pour that over some chicken breasts or thighs, cook in a baking dish at 350 until done, and serve over rice.

chicken tortilla soup. sounds complicated, but it's just opening a bunch of canned veggies and beans and putting them in a stockpot with diced chicken and rice, then serving up with sour cream, salsa, and tortilla chips. Excellent leftovers, too.

Yep, taco soup but with rice and diced chicken instead of ground beef and ranch dressing. shhh! my husband thinks it's a separate dish from taco soup, so I can make them both in one week and he won't complain that I'm serving him a duplicate meal.
