    Default What's for dinner?

    It’s a new month so let’s have a new thread. We can leave February far behind and jump into spring!

    For dinner tonight I’m making Chicken leg quarters braised in a tomatillo sauce with Brown rice and salad.

    We are having good old roast chicken with new potatoes and veg, followed by cherry and apple crumble with custard. That will make the kids sleep well tonight!

    When I take Jon to physical therapy I am going to go by my favorite deli and pick up some smoked cheese and some deli meat. Im going to get some sub buns and just do sandwiches today. I do not feel like cooking.

    Oh well, dinner didn't go as planned. Both boys wanted hot dogs, as Jake had swim squad, so didn't want a big meal! So I guess the roast chicken will now be for tomorrow.........
    It's a real shame as was looking forward to cherry crumble and custard.....

    I made a Big salad with roasted chicken strips, chic-peas, green olives with pimentos and fresh mushrooms. I used light ranch dressing with parmesan & romano cheese on top with black pepper. I'm starting to eat lighter for Spring! Cookie

    I made up a batch of Jfains homemade ricotta cheese last night. It turned out soooo good.
    Tonight I went off a Mama inspiration and made a Mushroom and Ricotta Pie. I tweaked a recipe from a 20 odd year old cookbook by Madeleine Kamman. I don't know if any one remembers Madelein Cooks from PBS back in the 80's?

    I'm enjoying mushrooms this week. and no, I'm not hallucinating.

    I am making Jon and mushroom mozerella pizza. I sauteed mushrooms in olive oil and butter with garlic, thyme, salt and pepper. I got some mozerella from my fav deli yesterday and some store bought pizza sauce. I have a pizza crust going in the bread machine right now.

    Default Wed. dinner

    I made General Tso's chicken stir fry.


    One can of oriental vegetables, Fresh mushrooms, 2 Cups of white rice

    Three Tablespoon of General Tso's sauce, 1 Tablespoon of soy-sauce

    Three chicken Breasts, 3 fresh garlic cloves crushed, ( a touch of salt)

    a teaspoon onion powder, little black pepper

    * Cook on the stove, 3 breasts of chicken in olive oil spry, put a Tablespoon of General Tso's sauce on each of the breast let it cook, add crushed garlic, soy-sauce, onion powder, salt, black pepper. Add your oriental veggies, fresh mushrooms. *Cook slowly on stove until done.


    *Side Dish was frozen chicken egg rolls Cookie
