My hubby had a craving for biscuits, gravy, eggs and sausage at midnight lol.
So thats what I made him.

My Morroco version of Pico-de-Gallo served over a bed of egg noodles and green beans it is smelling fabulous- tonight I added preserved lemon and dried fruits chopped fine (golden raisisn, dates, prunes) and white cooking wine a splash of red wine vinegar and oh my gosh is it smelling great in here!!

He didnt eat again til about 3pm today lol.
We had to go to Jon's Dad's when our electric went out today about 2pm.
We had a horrible storm and electric was out all over BUT Jon's Dad still had his so we went there and made ourselves at home. He came home about an hour later and made him and Jon a burger. I dont know about everyone else but when its that hot I cannot eat. After the electric was out for an hour this apartment was hot as heck!
About 18 miles from here they had a tornado touch down today.
It has stormed so hard at his Dads it had beaten alot of my herbs down and broken their stems along with breaking over a couple of his Dad's grapevines.
He has gone to his other sons house to check on their animals after the storm and its a good thing he did. A huge tree had gotten ripped out of the ground by the roots and had almost squashed one of their little dogs. It fell very close to the little guys dog house.

Tomorrow I am making Jon batter fried tilapia with spicy hush puppies.
I plan to make shrimp scampi for lunch.

Last night was grilled shrimp with and oregano-lemon dipping sauce, Grilled baby potatoes and a side of sauteed greens from the Garden.

Default Friday's Dinner..

I made Salmon marinated in General Tsao stir fry sauce with a about a tsp. lemon and dill. I cooked it in the oven for about 25 min. covered in foil.

For a side dish I made bow-tie pasta with med. shrimp. I mixed in extra virgin olive oil & Parmesan cheese.

I also made a salad with mushrooms & shredded Colby & Monterrey Jack shredded cheese, with honey mustard dressing. It was a really Good meal on a Hot Day!!

Yum janie- sounds delish! Tonight I had KFC's new grilled chicken & potato salad. It was good enuf- but nuthin' like homemade, fer shure!

Today we are doing our meat free night since tomorrow is hubby's birthday. Can't make him do meat free on his birthday.

I'm still making one of his favorites for dinner though. Indian BBQ cauliflower and grilled sweet potatoes. Yum!
