I hope dinner went well Francie!

I made stuffed bell peppers and they were great! We had rice on the side and I even made some terrific homemade french fried onion rings! I made a thick batter from pancake mix, dipped the o-rings in that then rolled them in Italian Style Bread Crums> woo-hoo did they turn out tasty, crisp & crunchy!!! So easy and went so fast too!

I am making herb roasted chicken with homemade dressing. I plan to take dinner to Jon's Dad this evening. I am gonna make roasted new potatoes, fresh corn and tomato salad, green beans and buttermilk biscuits.

Going to a barbecue and am taking a chilled tortelini salad loaded w/ artichoke hearts, split grape tomatoes, hearts of palm, cucumber, fresh basil, lotsa parm and a vinaigrette. Another friend is making her famous nectarine buckle- not sure what else we'll be having.

This morning I made Spiral Pasta with tomato sauce & turkey meatballs.
Last night dinner was breaded tilapia & pirogi with olive oil & 3 cheese blend for a side dish. Cookie

I took potatoes that cooked all night on low in the crockpot in the juice from buffalo wings we cooked yesterday. I placed the potatoes in the fridge this morn. Rinsed out the crockpot and put on some dry beans and pork neck bones. Tonight I made a cornbread hoe-cake and made hashbrowns with the potatoes we cooked last night using chopped potatoes and diced bell pepper in them. They turned out to be the best tasting potatoes ever!!!

So here was the menu:

Mixed Dry Beans with Pork Neck Bones
Hash browns
Corbread wedges

M-m-m-m goods eatin!
