    Yesterday we had what I term a school dinner.

    It's the type of meal that schools in the 60's and 70's used to serve at lunch time here in the UK.

    Corned beef - cold and sliced very thinly
    Mushy processed peas
    Fluffy mashed potatoes
    Parsley sauce.

    It may not be fine cuisine but my husband loves it.


    Today we are having

    Chicken curry (home made)
    Plain boiled basmati rice
    Peshwari Naan

    Petti pois
    Cherry tomatoes
    Chunky chips. Cooked in the Blaster (my term for the small halogen oven, great for cooking for two).

    Yesterday I made my Mom's pasta salad- it has some funky "white trash" components, but we were raised on this in the summer-time and I love it!

    Kevin's Mom's Pasta Salad

    1 lb. cooked, drained, cooled pasta (Mom always used rotini or "scroodles")
    1 lb. Spam, cubed (or ham)
    1 lb. velveeta cheese, cubed (or cheddar)
    1 c. cherry tomatoes, halved
    1 fresh cucumber, seeded and chopped
    1 c. broccoli florettes
    1 c. cauliflower florettes
    4 green onions, chopped
    1 c. Miracle Whip, more or less as desired ( or mayonnaise)
    2-3 T. juice from a sweet pickle jar
    1-2 T. celery seed
    S&P to taste

    Mix well. Chill. Serve.

    I really fancy cheese and onion pie with tinned plum tomatoes.

    Some grated cheese (any old hard cheese)
    Couple of teaspoons stinky Parmesan
    Half an onion finely chopped
    freshly cooked mashed potatoes

    Mix it all up in a bowl ( I ususally whisk it to make if fluffy)

    Put in oven proof dish, cover with more grated cheese

    Put under the grill until the cheese melts

    Throw some chopped parsley on top to make it look pretty.

    Serve with tinned plum tomatoes.

    Quick, easy, no potch and I love this dish.

    Default Fast Home-Made Potato Salad Recipe

    8-20-09 Tonight we had steak with a Cesar salad and I made Fast...

    Home-made Potato Salad here is the recipe:



    5 Red Potatoes, boiled & peeled, cut into med chunks (put in separate bowl)

    MIX TOGETHER :

    1 CUP MAYO

    1/4 CUP MUSTARD

    PINCH OF SALT & PEPPER & GARLIC POWDER

    1 tsp. Dill-Weed

    1/4 CUP CHOPPED ONION (small pieces)

    *MIX ALL OF THE ABOVE INTO THE POTATOES

    Garnish with 2 Hard Boiled Eggs sliced & Sprinkle with Paprika.

    Cover & Chill

    Enjoy! Cookie

    mama & janie talk traditional Italian delicasies a lot and I thought of them tonight when I made a rich meat sauce to serve over extra-jumbo elbow macaroni. It was very tasty- and I had enuf- mama & janie- ya coulda sropped by to join me!

    I had the day off today and started my day with yard work, mostly pulling weeds. I just didn't feel like cooking early on so I bought some Popeye's Chicken today w/ biscuit's & honey & mac-cheese. it's SO-GOOD!!!!!!!!
    Later on today I was still in a Spicy mood so I made jambalaya w/ smoked turkey sasage and one Red Pepper chopped up, Love-it! Cookie
