    Default stuffed pork loin

    I decided to make a stuffed pork loin and some roasted potatoes today

    I first made a stuffing mix with sauteed onions, celery, and corn, then added some cubed up bread,pepper, sage, rosemary, and thyme.



    Then I did the best I could opening up a pork loin



    covered it in a mixture of flour, sage, rosemary, thyme, salt, and pepper



    Baked it in the oven at 325



    Made a gravy with the drippings in the pan and we also had some mashed potatoes

    Here it is all plated up

    With those roasted potatoes (with carrots too) I wouldn't have even bothered with the mashed potatoes. It all looks good.

    We wouldn't have but the Grand daughter and her parents came for a visit and ended up staying for dinner, So my wife made some mashed potatoes up just to make sure everyone had enough to eat.

    Now that you've mentioned grand daughters. We will always fix something else for ours when we know she won't like the normal fare.
