Today I cooked a spicy cajun salmon tasty and delicious with some stuffed clams and stuffed mushrooms. I have learnt the Caribbean style of frying or stewing fish. for fried fish you wash the fish thoroughly with lemon, then season thoroughly, with every seasoning your mind desires, to take the freshness away. you dip in flour then egg then flour again. Fry until golden crispy brown. Saute tomatoes, onions, garlic, red peppers in a butter sauce, sprinkle a little paprika to give a little color place the sauteed veges over the fried fish.

I made split -pea soup last night, my hubby made ham so there you have it. I got those little green peas in the pkg. cooked my peas first. in a second pan I put diced pieces of ham, onion, carrots, celery with some olive oil browned it added a can of chicken broth and then added it to the peas later on when the peas were starting to break down.( 6-cups of water and 1 bag of green split-peas) it turned out good. Spead it onto some warmed tortillas, rolled and cut on the diagonal.
    mmmm! Sounds scrumptious, janie!
