    Default What is for Dinner Feb 2010

    I could not locate the last dinner thread so I made a new one.
    Today I made a pot of beef stew and potato cakes from leftover roasted garlic mashed taters to take to my father in law. Jon and I had roasted chicken and garlic rice. I made a chocolate peanut butter bundt cake last night. I plan to make pasta for dinner.

    Well yesterday (Friday) I made taco salad since the wife and son were having pizza (too much sodium for me). This is the third time I've made it from venison. With Mamas seasoning you can't really tell it from beef. Used iceberg lettuce, chopped onions with green, red bell peppers and baked corn tortillas (a sodium free version of chips). Seeing as that pkg of meat was 1 1/2 lbs I will be having it today also.

    For Mom and I tonight I made a cheesy baked ziti w/ sweet italian fennel sausage, and a broccoli salad w/ bacon, raisins and sunflower seeds. It was purty yummy- and the best part? We've got enuf leftover for tomorrow's supper, too!

    Fried oyster po boys for supper with some store bought french fries from the freezer.

    I made a huge pot of beef vegetable soup and gave half of it to my brother when he stopped by. I am making Jon fried pork chops for dinner since he doesnt like veggie soup.

    Tonight was pan-fried veal cutlets w/ cream gravy & smashed red potatoes, and orange-glazed carrots. And butterscotch pudding.

    Tonight's supper for friends was a Mexican spread: Shredded Chicken & Beef Tostadas and soft shrimp tacos w/ lettuce, cheese, tomato and all the fixin's. Chips & salsa/guac/sour cream. Friend Brian brought oatmeal/choc. chip cookies and friend Rachel brought sour cream/raisin pie.

    Hi everyone today I made home-made turkey chili it's still cold here in Chicago!!
    Turkey Chili:
    I used lb. ground turkey, one can red hot seasoned chili beans,
    a can of ro-tel diced- tomatoes 1 pkg. chili mix, 1/2 cup water
    1 small onion chopped and 2 cloves garlic pressed.
    1 tsp. cumin, 1 tsp chili pepper add a dash of salt and pepper, some Red Pepper flakes
    Grated sharp cheddar on top. This was some Hot-chili but really Good!

    Supper last night was per Mom's request: Hamburger/Mushroom Gravy Over White Toast, Scrambled Eggs, Pan-Fried Potatoes some Frozen Mango Chunks from Aldi's...
