Cool Thread for Substitute Ingrediants

Just wondering is there a section for substitute ingredients.. In case you don't have that ingrediant.. or someone is alergic to that ingrediant.. what you can use instead? I am on my way to make oatmeal chocolate chip muffins.. (will pass the recipe on if it works) But someone here is alergicic to vanilla.. just wondering if there is something else I can use?

I know for instance (I'm alergic to eggs.. you can use applesauce..)

Helpful Hints over in the "About ingredients" Thread section! But I am not sure about the vanilla as I do not recall us talking about it before. You may try the artificial vanilla if you can not use the real thing! It is not as strong so I would use a slight amount more of the artificial!
