Recipe: Freezer Fruit Cookies
- 1 cup butter, softened
- 1 cup confectioners sugar
- 1 egg
- 2 1/2 cups white flour
- 1/2 tsp cream of tartar
- 3/4 cup candied cherries
- 3/4 cup candied pineapple
- 3/4 cup raisins, chopped
- 1 cup chopped walnuts
- Cream butter and sugar; beat in egg. Gradually add flour and cream of tartar. Beat until just mixed.
- Stir in fruit and nuts.
- Divide dough in half. Roll each half into a log 2" in diameter. Wrap in wax paper; freeze firm.
- Slice 1/4" thick.
- Place on greased baking sheet.
- Bake at 375° F for 12 to 14 minutes until lightly brown on edges.
Makes 6 dozen cookies. |
