Recipe: Fresh Apple Cake
- 3 cup raw apples
- 1 1/2 cups canola oil
- 2 cups sugar
- 3 eggs
- 2 1/2 cups sifted flour
- 1 tsp salt
- 1 tsp soda
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 cup chopped walnuts
Glaze
- 1 1/2 cups sifted powdered sugar
- 3 tbsp water
- 2 tsp vanilla extract
- Peel apples, grate or chop and set aside.
- Pour the canola oil into a large mixing bowl.
- Add sugar and eggs and beat well.
- Sift together flour, salt, soda, baking powder, and ground cinnamon.
- Gradually add flour mixture to oil, sugar, and egg mixture.
- Add vanilla, then fold in the apples and nuts.
- Bake in a well-greased bundt or tube type pan. Bake at 350° F for 1 to 1 1/2 hours or until deep golden brown.
- Cool completely before removing from pan.
- Drizzle glaze over top of cake, allowing it to run down the sides of the cake. If glaze is too stiff, add a bit more water to mixture and stir well.
