Recipe: Fried Eggplant
- 3/4 cup flour
- 1/4 tsp garlic salt
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 eggplant
- 1/2 cup cream
- 1/3 cup beer
- 1/2 tbsp oil
- 1 egg white, beaten
Sift together the dry ingredients. Stir cream, beer, and oil into dry ingredients. Fold in stiffly beaten egg white. Peel eggplant, cut in circles, and then in strips; (resembles French fries). Dip strips into the batter. Pour oil into frypan to cover the bottom, heat oil and deep fry coated eggplant. Salt and eat fried eggplant. Delicious. You may also use this recipe for zucchini. Also excellent for appetizers.
