Grapefruit in the Oven Ingredients

• 1 large grapefruit
• 1 tsp sugar
• Vanilla ice cream, frozen very firm
• Whites of 1 egg
• 1/2 tsp pure vanilla extract

To make Grapefruit in the Oven

1. Cut grapefruit in half. Remove center "core" from each half; cut around outer rims and each segment.
2. Beat egg whites until fluffy.
3. Add sugar and vanilla; beat until whites are stiff.
4. Fill grapefruit centers with ice cream, then heap egg whites onto each grapefruit half, bring whites to edges.
5. Place on baking sheet and put under broiler about 6" from heat source until meringue turns light brown. Serve promptly.
