Recipe: Grilled Whole Salmon
- 1 whole salmon
- 1 medium onion, sliced
- 1 whole lemon sliced
- dried parsley flakes
- Rinse whole salmon and pat dry.
- Remove dorsal fin (center back) by cutting along either side and then pulling forward. (You can have your fish market do this for you.
- If you cook fish whole, your need to wrap the head and tail in damp towels and aluminum foil.
- Season cavity and fill with lemon slices, onion, and parsley.
- Brush fish heavily with oil and place on grill covered with foil that has been poked with small holes.
- Add hickory chips to charcoal.
- Cover grill and cook about 20 mins and turn fish over.
- Fish is done when it flakes or reaches about 120° F.
- Remove from grill and place on board to skin.
- Can be served hot or chilled.
