Recipe: Chicken Gumbo
- 1/2 cup chopped onion
- 1/2 cup green pepper, slivered
- 1 cup chopped celery
- Butter or salad oil
- 2 cups canned or peeled fresh tomatoes
- 1 or 2 bay leaves
- 3 cups cooked chicken pieces
- 1/4 tsp thyme leavs
- 1 cup sliced okra, fresh, frozen or canned
- 2 tbsp chopped parsley
- 1/4 tsp Tabasco Sauce
- 1/2 tsp gumbo file (you may omit)
- Salt to taste
- 1 tbsp cornstarch
- 3 cups water
- 1 cup Basmati rice
- Saute onion, green pepper, and celery until soft in very little butter or canola oil.
- Add the rest of the ingredients except chicken & Basmati rice; simmer for 30 minutes; add chicken and heat thoroughly.
- About 20 minutes before serving, add Basmati rice. Stir often.
- Season to your taste.
