Recipe: Ham Pecan Tossed Salad
- 3 cups iceberg lettuce
- 2 cups cubed ham
- 1/4 cup green onion, sliced
- 11 oz. can mandarin oranges, drained
- 1/8 tsp garlic powder
- 1/4 cup diced red peppers
- 1/4 cup sugar
- 3 cups spinach
- 1 cup seedless red grapes, halved
- 1/2 cup carmelized pecan halves
Dressing
- 1/4 cup oil
- 1 tbsp sugar
- 2 tbsp cider vinegar
- Carmelize pecans by heating 1/4 cup sugar in heavy saucepan until sugar
melts.
- Add pecans and stir until coated.
- Pour onto waxed paper and cool.
- Break apart and set aside.
- Combine lettuce, spinach, ham, onion, garlic powder, peppers, and oranges.
- Make dressing by whisking all dressing ingredients together and toss with
salad.
- Add reserved pecans right before serving.
