Recipe: Hearty Pea Soup

Recipes using McCormick Whole Bay Leaves

• 1 onion, diced
• 2 tbsp olive or canola oil
• 1 bay leaf
• 1 tsp celery seed
• 1 cup green split peas
• 1/4 cup barley
• 1/2 cup baby lima beans
• 10 cups water
• 2 tsp salt
• dash fresh ground pepper
• 1/2 tsp basil
• 1/2 tsp thyme
• 1 carrot, chopped
• 3 stalks celery, diced
• 1 tbsp parsley flakes
• 1 potato, sliced

1. Saute onion in oil until clear. Add bay leaf, and celery seed.
2. Stir in peas, barley, and lima beans.
3. Add 5 cups cold water and bring to boil.
4. Cook on low heat, covered, for about 1 hour and 15 minutes.
5. Add salt, pepper, vegetables, and herbs.
6. Turn down heat as low as possible, and simmer another 30 to 45 minutes.
7. Meanwhile, bring to boil the other 5 cups of water. Add water to soup, stir, and enjoy.

Makes about 8-9 cups of soup
