Recipe: Holiday Pork Roast
Pork Roast
- 4-5 lb pork roast, bones and rolled
- 1/2 cup sherry
- 1/2 cup soy sauce
- 1 tsp ground ginger
- 2 tbsps dry mustard
- 2 tsps dried thyme
- 2 cloves garlic, chopped
Sauce
- 10oz jar current jelly
- 2 tbsps sherry
- 1 tbsp soy sauce
- Preheat oven to 325° F.
- Rub roast with dry mustard and thyme.
- Mix sherry, soy sauce, garlic and ginger and pour over roast.
- Let stand at room temperature, turning meat occasionally.
- Remove meat from marinade dish and place on rack in baking dish.
- Roast at 325° F for 2 1/2 hours or 185° F.
- Stir sauce ingredients together; mix well.
- Simmer over medium heat for 2 mins.
- Pass sauce along with the roast when serving.
