Recipe: Hot Bacon Dressing
- 6 slices bacon, diced
- 1 onion, sliced thin
- 1/3 cup cider vinegar
- 1 1/2 tsps salt
- 1/4 tsp pepper
- 1/4 tsp dry mustard
- 3 tbsps sugar
- 2 eggs
- Cook bacon and drain.
- Lightly saute onion in bacon fat.
- Add vinegar, salt, pepper, mustard and sugar.
- Cook until sugar dissolves.
- Beat eggs slightly; into them stir small amount of vinegar mixture.
- Slowly pour egg mixture into remaining vinegar.
- Stir rapidly over low heat until thickened; do not boil.
- Pour over greens (spinach or bibb lettuce), add bacon and toss.
