Recipe: Hummingbird Cake
- 3 cups flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 cups sugar
- 3 eggs
- 1 tsp butter flavor or almond extract
- 1 (8 oz) can crushed pineapple with liquid
- 2 medium or 3 small bananas
- 1 cup chopped walnuts
- 1 1/2 cups canola oil
- Mix this only by hand. Combine the flour, soda, cinnamon, sugar, oil, eggs, and butter flavoring in large bowl, stirring very well.
- Add undrained pineapple.
- Stir in bananas, chopped and walnuts nuts.
- Mix again. Pour into a greased and floured bundt pan.
- Bake at 350° F for 1 hour and 5 minutes.
- Cool in pan on wire rack for 1 hour before removing.
