Recipe: Italian Zucchini Casserole
- 3 cups sliced zucchini squash
- 1 pound ground turkey Italian sausage
- 1 small onion, diced
- 1 tsp chopped garlic (about 2 cloves)
- 1 to 2 cups Mozzarella cheese, grated
- 2 1/2 cups spaghetti sauce
- 3/4 cups brown rice
- Small can stewed tomatoes, drained (optional)
- Place rice in 2 cups boiling water; set aside.
- Brown the sausage, onions, and garlic. Drain.
- Add spaghetti sauce and simmer 5 to 10 minutes.
- Drain the rice.
- Layer all ingredients beginning and ending with meat sauce in a 1 1/2 quart casserole dish.
- Bake at 350° F for 45 to 55 minutes.
- Top with 1 to 2 ounces of reserved cheese and brown.
