Recipe: Italian Noodle & Sausage Soup

• 1 1/2 lbs mild Italian sausage, cut in 1/2" lengths
• 2 cloves garlic, mashed
• 2 large onions, chopped
• 28 oz can tomatoes
• 3 (14 oz) cans regular strength beef broth
• 1 1/2 cups dry red wine orwater
• 1/2 tsp basil leaves, crushed
• 3 tbsp chopped parsley
• 1 medium green bell pepper
• 2 medium zucchini, sliced
• 3 cups bow tie noodles

1. In 5-quart kettle cook sausage in a little oil. Drain.
2. Add garlic, onions and brown.
3. Stir in tomatoes with liquid and add broth, wine and basil.
4. Simmer 30 minutes, covered. Cool, chill and skim fat.
5. Reheat and add rest of ingredients.
6. Cook uncovered 25 minutes until noodles are done.
