Recipe: Jamaican Rice
- 2 tbsp butter
- 2-3 tsp curry powder
- 3 medium bananas
- 1/4 cup finely diced onions
- 1/4 cup sliced almonds
- 3 cups cooked basmati rice
- 1/4 cup flaked coconut
- Melt the butter in a large non-stick skillet.
- Slice bananas into 1/2" thick slices and add to skillet. Cook over medium heat until brown. Remove from pan, and set aside.
- Add onions and almonds to pan. Cook, stirring often, until onions are translucent.
- Stir basmati rice and coconut flakes into the onions and heat until warm.
- Add the bananas; toss lightly and serve.
