Recipe: Kiwi Fruit Muffins

• 2 cups all-purpose flour
• 1 tbsp baking powder
• 3/4 tsp salt
• 1/2 cup granulated sugar
• 3/4 tsp ground cinnamon
• 1 egg, slightly beaten
• 1 cup milk
• 1/4 cup canola oil
• 2 medium sized kiwi fruit, mashed
• 1/2 cup chopped walnuts

1. Combine flour, baking powder, salt, sugar, and ground cinnamon in a large bowl. Set aside.
2. Combine egg, milk, and oil; add to dry mixture.
3. Stir until dry ingredients are moistened.
4. Add mashed kiwi fruit and stir until blended.
5. Gently stir in chopped walnuts.
6. Spoon Kiwi Muffin batter evenly into greased muffin pans, filling 3/4 full.
7. Bake at 400° F. for 20 minutes.

This recipe yields 1 dozen Kiwi Fruit Muffins.
