Recipe: Leaf Lettuce Bread

Recipes using Durkee Ground Nutmeg

• 1 1/2 cups all-purpose flour
• 2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/2 tsp ground ginger
• 1/2 tsp ground nutmeg
• 1/2 cup canola oil
• 1 cup granulated sugar
• 2 eggs
• 1 1/2 tsp grated lemon peel
• 1 cup lightly packed finely chopped green leaf lettuce
• 1/2 cup chopped nuts

1. In a small bowl stir togetherthe flour, baking powder, soda, salt, ground ginger, and ground nutmeg.
2. In medium-size bowl beat together the canola oil, sugar, eggs and lemon peel until well blended.
3. Add flour mixture, mixing until smooth.
4. Stir in lettuce and nuts.
5. Pour into a greased and floured 4x8" loaf pan.
6. Bake in a 350° F. oven until the bread is golden brown on top and a wooden pick inserted in center comes out clean, 50 to 55 minutes.
7. Cool in pan on a wire rack about 10 minutes.
8. Turn out of pan and continue cooling on rack.

Serve Leaf Lettuce bread lightly warm or cooled. This sweet bread is laced with lettuce; spread slices with cream cheese.
