Recipe: Lemon Loaf

Recipes using Diamond Shelled Walnuts

• 1/2 cup butter, softened
• 1 cup white sugar
• 2 eggs
• 1/2 cup milk
• Rind of 1 lemon
• 1/2 cups flour
• 1 tsp baking powder
• 1/2 tsp salt
• 1/2 cup walnuts

1. Cream shortening and white sugar; beat in eggs.
2. Sift dry ingredients; add alternately with milk and mix until blended.
3. Add lemon and walnuts.
4. Place in paper-lined loaf tins.
5. Bake 40 to 45 minutes at 325° F.
6. Remove from oven.
7. While hot, pour over loaf juice of lemon mixed with 1/2 cup white sugar.
8. Let stand 20 minutes.
