Recipe: Lemon Muffins
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2 egg yolks, well beaten
- 3 tbsps lemon juice
- 2 egg whites, room temperature
- 1 tbsp lemon rind
- 2 tbsps sugar
- 1/4 tsp cinnamon
- Preheat oven to 375 degrees
- Grease muffin pans
- Combine flour, baking powder and salt; set aside.
- Cream butter and gradually add 1/2 cup sugar, beating till light and fluffy.
- Beat in egg yolks.
- Add dry ingredients to butter mixture alternately with lemon juice, mixing just till combined.
- Beat egg whites till stiff; gently stir in lemon rind.
- Fold into muffin mixture.
- Spoon batter into greased muffin pans.
- Combine 2 tbsps sugar and cinnamon and sprinkle on top of muffins.
- Bake for 20-25 mins.
