Recipe: Lemon Squares

Ingredients in Lemon Squares

• 1 cup white flour
• 1/2 cup butter
• 1/4 cup sugar
• 2 eggs
• 1 cup sugar
• 1/2 tsp baking powder
• 2-1/2 tbsp fresh lemon juice
• dash of salt

To make Lemon Squares

1. Blend flour, butter and 1/4 cup sugar until well mixed.
2. Pat evenly into the bottom of 8” x 8” baking pan.
3. Bake 20 minutes at 350° F.
4. Meanwhile beat together eggs, 1 cup sugar, baking powder, lemon juice and salt.
5. Pour over baked crust.
6. Return to oven for 20 to 25 minutes at 350° F.
7. Cool on rack. Cut into squares.
