Recipe: Lemon Tea Bread II
- 1/3 cup melted butter or margarine
- 1 cup granulated sugar
- 3 tbsps lemon juice
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 cup milk
- 1 1/2 tsp lemon peel
- 1/2 cup pecans, chopped
Lemon Glaze
- 3 tbsps lemon juice
- 1/4 cup sugar
- Preheat oven to 350 degrees
- Grease and flour 9 x 5 inch baking pan
- Mix lemon glaze ingredients together and set aside.
- Cream butter, sugar and lemon juice until fluffy.
- Add eggs and beat.
- Mix flour, baking powder and salt.
- Add flour mixture alternately with milk to butter mixture.
- Stir until blended; do not overmix.
- Fold in lemon peel and pecans.
- Bake for 1 hr.
- Pour lemon glaze over top immediately.
- Let stand 1 hr before turning onto rack to cool.
- Cut thinly.
