Lobster Newburg Ingredients

• 1 pint lobster meat
• 1 pint heavy cream
• 3 egg yolks, beaten
• 1/8 tsp cayenne pepper
• 1/4 tsp paprika
• 1/4 tsp baking soda
• 1/2 cup Sherry
• Toasted whole wheat bread

To make Lobster Newburg

1. Stir the baking powder into the pint of heavy cream.
2. Place the cream in a double boiler, and mix in the 3 egg yolks along with the sherry.
3. Cook the cream mixture over boiling water until thick.
4. Add the lobster meat, paprika, and cayenne pepper.
5. Stir until the lobster meat is thoroughly heated.
6. Serve Lobster Newburg over toasted bread points.

Makes four servings of Lobster Newburg.
