Recipe: Locro



 

Recipes using Tones Oregano Leaves

 

A meat and vegetable stew

  • 8 oz dried Northern white beans
  • 2 lbs stew beef
  • 4 hot Italian sausages
  • 1/2 lb Beef Frye, chopped
  • 8 beef ribs (optional)
  • 1 can white whole kernel corn, drained
  • 4 medium potatoes, peeled and cubed
  • 4 medium sweet potatoes, peeled and cubed.
  • 6 carrots, sliced
  • 1 yellow squash, sliced
  1. Cover beans with water and let soak overnight.
  2. Next day, bring the beans to a boil for 15 minutes, covered with the same water.
  3. Add remaining ingredients. Simmer until everything is tender, at least 1 hour.
  4. It should be the consistancy of a thick soup. When it is ready, remove from heat, and prepare the Locro Sauce (below).

Locro Sauce Recipe:

  • 2 tbsp vegetable oil
  • 2 onions, chopped
  • 1 green pepper, chopped
  • 2 tbsp parsley, chopped
  • 2 tbsp oregano leaves
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 28 oz can tomatoes
  1. Saute onion and green pepper in oil until tender.
  2. Add remaining ingredients.
  3. Simmer for 10 minutes.
  4. To serve, place stew in casserole and pour hot Locro sauce over it. Serve with a ring of rice. Serves 12.
