Recipe: Marinated Noodles With Cucumbers
- 1 pound uncooked penne noodles
- 1 1/2 cups sugar
- 1 1/2 cup white vinegar
- 1/4 cup canola oil
- 2 cucumbers, peeled and diced
- 1 medium onion, chopped
- 1 cup sliced mushrooms
- 1 tsp garlic
- 1 tbsp parsley flakes
- 1 tsp sea salt
- 1 tsp white pepper
- Cook the 1 pound of penne pasta until tender, drain and cool.
- Meanwhile, heat sugar, vinegar and oil in a 2 quart sauce pan until sugar is dissolved. Pour over noodles.
- Cool, then add the diced cucumbers, diced onion, sliced mushrooms, garlic, parsley, sea salt, and white pepper. Mix together well.
- Refrigerate for 3 hours and then stir before serving.
