Recipe: Melon Salsa
- 1/2 ripe honeydew melon
- 1/2 ripe cantalope melon
- 1 tsp canned jalapeno, chopped fine
- 3 ripe tomatoes, diced
- Juice of 1 fresh lime
- 1 tbsp fresh lemon juice
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped fresh green onions
- 1 1/2 tbsp canola oil
- 1 tbsp Tones Peppercorn Melange Peppercorns
- Dice honeydew melon, and cantalope into 3/4 inch cubes.
- Finely chop the green onions.
- Place the remaining ingredients in a large pyrex bowl, and mix well.
- Add the green onions and mix some more.
- Add the honeydew melon cubes and cantalope cubes, and gently stir to combine with the salsa in the bowl.
- Cover, and refrigerate overnight.
Excellent with seafood.
