Recipe: Melon Salsa

Recipes using Tones Peppercorn Melange

• 1/2 ripe honeydew melon
• 1/2 ripe cantalope melon
• 1 tsp canned jalapeno, chopped fine
• 3 ripe tomatoes, diced
• Juice of 1 fresh lime
• 1 tbsp fresh lemon juice
• 1/2 cup chopped fresh cilantro
• 1/2 cup chopped fresh green onions
• 1 1/2 tbsp canola oil
• 1 tbsp Tones Peppercorn Melange Peppercorns

1. Dice honeydew melon, and cantalope into 3/4 inch cubes.
2. Finely chop the green onions.
3. Place the remaining ingredients in a large pyrex bowl, and mix well.
4. Add the green onions and mix some more.
5. Add the honeydew melon cubes and cantalope cubes, and gently stir to combine with the salsa in the bowl.
6. Cover, and refrigerate overnight.
