Recipe: Mexican Black Bean Salad



 

Recipes using McCormick Parsley Flakes

 

Mexican Black Bean Salad Ingredients:

  • 15 ounce can black beans, drained and rinsed
  • 12 ounce can whole-kernel corn, drained
  • 1 medium tomato, chopped
  • 1 green onion top for garnish
  • 1/2 cup thinly sliced red onion
  • 1/2 cup finely chopped bell pepper
  • 1/8 tsp garlic powder
  • 2 tsp dried parsley leaves

Mexican Black Bean Salad Dressing Ingredients

  • 3/4 cup Italian salad dressing
  • 2 tsp chopped cilantro
  • 3/4 tsp Tabasco sauce

To make Mexican Black Bean Salad Dressing:

  1. Make dressing first.
  2. Blend and refrigerate until used.

To make Mexican Black Bean Salad:

  1. In large bowl combine all salad ingredients including the prepared Mexican Black Bean Salad Dressing (above).
  2. String to blend well.
  3. Cover tightly and refrigerate at least 1 hour before serving to chill the beans.
  4. Garnish the Mexican Black Bean Salad with finely chopped green onion tops and red onion slices.
