Recipe: Mexican Lasagna
- 12 ounces cooked ground turkey
- 2 cups canned tomatoes, diced
- 2 cups tomato sauce
- 4 ounce can diced green chiles
- 1 1/2 tbsp taco seasoning
- 1 1/2 cup part skim ricotta cheese (15 ounce carton)
- 4 egg whites
- 8 1 ounce corn tortillas
- 4 ounces shredded Jack or Cheddar cheese
- Combine cooked ground turkey, tomatoes, tomato sauce, green chiles, and taco seasoning.
- Bring to a boil; reduce heat and simmer 15 minutes.
- In a small bowl whisk egg whites; add ricotta cheese and mix well.
- Use a 9x13" glass baking dish.
- Spread half of the seasoned meat mixture in bottom of pan; top with 4 tortillas cut to fit.
- Spread 1/2 of ricotta cheese and 1/2 of grated cheese.
- Repeat layering with turkey, tortillas and cheeses, ending with grated cheese on top.
- Bake at 350° F. for 20 to 30 minutes.
- Let stand 10 minute before cutting.
