Recipe: Mexican Vegetable Soup
- 1 lb ground turkey
- Flour
- 2 egg whites
- 47 oz can chicken broth
- 3 (10 oz) cans condensed beef consomme
- 1 tbsp oregano leaves
- 2 medium onions, chopped
- 1 tsp crushed red pepper (hot)
- 4 carrots, sliced
- 1 medium can sliced tomatoes
- 1/4 cup Basmati rice (raw)
- 1/3 cup chopped fresh cilantro
- 1 bunch fresh spinach
- Chopped cilantro
- Fresh limes
- Combine turkey and egg whites.
- Add flour to bind. Make small balls.
- Add to boiling broth. Add onions, oregano, and pepper too. Simmer for 5 minutes.
- Add rice, carrots, cilantro, and tomatoes.
- Simmer 20 minutes.
- Add fresh shredded spinach.
- Cook 5 more minutes.
- Ladle into wide soup bowls.
- Garnish with fresh cilantro and limes.
