Recipe: Minestrone Soup

Recipes using McCormick Basil Leaves

• 1 tbsp olive oil
• 1 cup onion, diced
• 1 clove garlic, minced
• 1 cup carrots, diced
• 1 tsp sweet basil
• 2 small zucchini or squash, cubed
• 1 lb can Italian tomatoes
• 2 10-oz cans beef bouillon
• 2 cups cabbage, chopped or shredded
• sea salt and white pepper to taste
• 1 lb can white or red kidney beans
• 1/2 cup rice
• 1/2 cup red wine
• grated Parmesan cheese

Slice and brown sausage in olive oil. Add onion, garlic, carrots and basil. Cook 5 minutes. Add zucchini (squash), tomatoes, bouillon, cabbage, salt and pepper and bring to boil. Simmer, covered, 1 hour. Add beans, rice, wine and cook 20 minutes. Cool and refrigerate. Reheat 20 minutes before servinç. Serve with grated Parmesan cheese. Serves 6.
