Recipe: Minestrone Soup
- 18 cups water
- 2 1/2 cups chopped onions
- 2 1/2 cups chopped green bell pepper
- 2 1/2 cups chopped celery
- 2 1/2 cups chopped carrots
- 2 1/2 cups cubed potatoes
- 2 1/2 cups chopped red bell pepper
- 29 oz kidney beans
- 16 oz shell macaroni
- 1 1/2 lbs lean beef, cubed
Spices:
- 1 tsp garlic powder
- 1 tbsp sea salt
- 1 tbsp ground white pepper
- 1 tbsp Italian seasoning
- Add all ingredients together except macaroni. Stir well.
- Bring to a boil. Reduce heat and simmer for 1 1/2 hours.
- Add macaroni for last 15 minutes of cooking time.
