Recipe: Mixed Fruit Salad
- 1 can mandarin oranges (reserve juice)
- 2 medium apples, diced
- 2 bananas, diced
- 1 can pineapple chunks (reserve juice)
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/3 cup reserved mandarin juice
- 3/4 cup reserved pineapple juice
- In a 2 quart sauce pan combine the sugar, and cornstarch, then blend in
the lemon, mandarin and pineapple juices.
- Cook over medium heat until the juices thickens and boils.
- Place the fruit in a medium size pyrex bowl, and pour the hot juice mix
over top of fruit.
- Place in refrigerator to cool. Cover after 10 minutes, and keep in refrigerator for 4 hours or overnight.
