Recipe: Mochiko Chicken

Mochiko Chicken
3 to 5 pounds chicken thighs (deboned and cut)
Batter:

• 2 tablespoons flour
• 1/4 cup cornstarch
• 1/4 cup rice flour (mochiko)
• 1/4 cup sugar
• 2 tablespoons minced green onion
• 1 clove minced garlic
• 2 teaspoons salt
• 1/4 teaspoon Accent
• 1/4 cup soy sauce
• 1 tablespoon oyster sauce
• 2 eggs, beaten
• 2 to 3 fresh chili peppers, minced
• 1 tablespoon sesame oil

1. Combine all batter ingredients.
2. Add chicken and marinate 2 hours or longer; overnight for a tastier dish.
3. Cover frying surface of skillet with oil, brown and cook both sides of chicken until done.
