Recipe: Mushroom Pockets
- 1 lb mushrooms, chopped
- 2 tbsps olive oil
- 2 tsps dried parsley flakes
- 1/4 cup grated Parmesan cheese
- 4 oz filo dough
- 1/2 cup melted butter or margarine
- salt to taste
- Preheat oven to 375 degrees
- Saute mushrooms in oil until wilted.
- Stir in parsley and cook until all liquid evaporates.
- Remove from heat; stir in cheese and salt.
- Cool.
- Fill layers of filo dough with mushrooms as if making envelopes.
- Place pockets on buttered foil lined baking pan in a single layer.
- Chill one hr or more.
- Bake for 35-40 mins or until browned.
- Serve hot or cold.
